The house
Mistela rules at Cavas Manchón. It is a sweet wine of grape must whose fermentation is stopped with alcohol, and the family has made it for about forty years with grapes from Dolores Hidalgo and local labor. The winery is in El Rosillo, on the outskirts, on the highway to San Luis de la Paz.
It all starts with Juan José Manchón, a Catalan who survived the Spanish Civil War and arrived in Dolores Hidalgo in the 1970s, where he found a way to make a living from the vine. His son, Juan Manchón, trained as a winemaker and took over the winery. Today he also signs the wines of Cuna de Tierra and has advised other houses in the state, such as Guanamé and Viñedo San Miguel.
Alongside the mistelas, the house bottles dry reds, whites, rosés, and a sweet red. To the north, in San Diego de la Unión, Juan Manchón is also behind Viñedo El Raco, which held its first vendimia in 2023 and its second, together with Cavas Manchón, in 2024.
Tastings happen in two places. At the winery, by appointment, there are tastings of two or four wines that can be dry, sweet, or a mix of both. In the historic center, behind the Parroquia de Nuestra Señora de los Dolores (the parish church), the house also has a wine bar with tastings and pairings.
The wines
Dry and sweet wines live side by side in the winery, among reds, whites, and rosés. Mistela, made with Dolores Hidalgo grapes, is its emblem, and there is also a sweet red.
Dessert
Beso de Miel
Mistela that the house describes as sweet and unctuous.
Dessert
Beso Tinto
The house's sweet red.
