The house
Editorial review · reviewed on October 11, 2026Sylvia Penski chose a plot above El Tepehuaje, between San Nicolás and Tuxcueca, in Jalisco, with Lake Chapala in view. She planted between 2016 and 2017 and now works mostly with Syrah, Tempranillo, and Chardonnay. In her first years she took advice from Serapio Ruiz, the grower behind El Tejón, who is a neighbor on the south shore.
Cava Post Data makes handcrafted wines in small runs. The grapes are picked by hand, the winemaking intervenes as little as possible, and a good part of the field crew are women. Visits, always by reservation, walk through the vineyard before the tasting of the house's wines.
