The place
At Colomos 2546, in the Italia Providencia neighborhood of Guadalajara, Gastón Wine Bar puts wine next to music, as its motto says, vinos y rolitas (wines and tunes). The list changes with what arrives at the cellar and includes natural and conventional wine from small producers, leaning toward organic and biodynamic. The kitchen follows with dishes such as oysters and tomato salad. Tuesday to Sunday it opens in the afternoon, and on weekends it programs music with guests. It appears in the Star Wine List 2026.
