The house
From the rustic stone tasting room you can see the vineyard and, beyond it, Lake Chapala. Cava Chalupo is in San Luis Soyatlán, in the municipality of Tuxcueca, at the foot of the García hill, and it began in 2015, when Rafael Vargas planted Syrah, Cabernet Sauvignon, Tempranillo, and Grenache following the advice of Serapio Ruiz, the grower who opened the way on the lake's south shore.
Vargas credits the mineral character of his wines to the local soil, stony and almost entirely volcanic in origin. The visit includes a guided tour of the cellar and a tasting of the house's whites, rosés, and reds. In 2024 the Jalisco Tourism Secretariat counted it among the four houses on the south shore ready to receive visitors.
