The house
At Vaivén, wine shares the estate with a brewery, an orchard, cheeses, and a kitchen. It is in the Valle del Coyote, in Ezequiel Montes, Querétaro, between Tequisquiapan and Bernal and about 20 minutes from downtown Tequisquiapan. Jorge Arizpe and Mariano Velten, who came to wine as hobbyists, opened it in 2015.
The name points to the balance the house looks for in its wines, which it arranges in five lines from the freshest to the longest-lived. Silvestre gathers the fruity ones, Equilibrio the young ones, Balance those that pass through barrel, Temple the reserves, and Impulso the sparkling wines. The list has whites, rosés, reds, and bubbles.
The house brews its own beer, Cirquera, and the brewery can be visited. At Títere, the restaurant, the cooking starts from the orchard and from ingredients of the semidesert. The estate is part of the Piedras de Sol complex, with country villas to stay in, a pool with a bar, and gardens for weddings, and it has hosted food gatherings such as GastroFest. Every harvest season it holds the Vendimia Viñedos Silvestres.
It is open Thursday through Sunday, with some experiences offered only on weekends, and you should reserve a table ahead. An afternoon can fit the guided winery tour, an orchard lunch, and sunset over the vineyard.
