The house

Almost everything that comes out of Sala Vivé is traditional-method sparkling wine, with a second fermentation in the bottle, and it rests in a cellar dug 82 ft (25 m) deep in Ezequiel Montes, Querétaro. The house is the Mexican subsidiary of Freixenet. The Sala Vivé line spends about 18 months on its lees, and the Viña Doña Dolores Brut Nature Gran Reserva, between 24 and 30 months. There are also sparkling rosés and still wines.

The story begins in the late 1970s, when the Ferrer family, owners of Freixenet in Catalonia, bought the Tabla del Coche estate, in the valley of San Juan del Río and Ezequiel Montes. The name is that of Dolores Sala Vivé, mother of Josep Ferrer, and its top line, Viña Doña Dolores, remembers her.

Heading the winemaking and the management is Lluís Raventós Llopart, who describes the area as extreme viticulture, with semidesert, cold, dry winters, and humid summers without much heat. The grapes are of Catalan tradition, Macabeo and Xarello, along with Ugni Blanc.

The estate receives visitors with guided tours every day that go down to the cellar and end with a glass. There is also an Uva Bus that drives through the vineyard, pairings with four cuisines, and a wine bar on the highway from San Juan del Río to Cadereyta. On weekdays the tours leave at noon and 2 p.m., and on weekends there are several departures.

The wines

Bubbles above all, on a base of Macabeo, Xarello, and Ugni Blanc. The Sala Vivé line spends close to a year and a half on the lees and the Viña Doña Dolores Gran Reserva considerably more. Sparkling rosés and a few still wines round out the range.
