The place
From Mexico City, the agency Espíritu Aventurero organizes group trips around the country and abroad, and sees clients by appointment at an office in the colonia Del Valle Centro. It says it has more than twelve years in operation and is listed in the Registro Nacional de Turismo (the national tourism registry). Its Ruta del Queso y Vino (Cheese and Wine Route) is a full-day trip. Departure is before dawn, at 5:00 or 5:30 a.m., and the return is around 10 p.m. First there is a cheese farm, with a farm tour, an aging cellar, and a tasting of four cheeses with bread. Then, a vineyard, with a visit to the facilities, an explanation of the winemaking, and a tasting. The day ends in Bernal, at the foot of the Peña, more than 945 ft (288 m) high, and among its colonial streets. The package includes round-trip transportation, a coordinator who works in Spanish, traveler's insurance, and a complimentary glass of wine. Possible stops include the wineries Freixenet, La Redonda, Donato, and Bodegas de Cote, and the cheese dairies VAI and Bocanegra, and they change with each trip.
