The house
In 2021, seven years after founding Cava 57, the Parrodi family began making wine in its own winery, without the Freixenet infrastructure it had used at the start.

The family founded it in 2014 in San Juan del Río, next to the Mexico City to Querétaro highway, and grows about 15 acres (6 hectares) of vines. The first open harvest was in 2015, when the family invited friends to pick grapes, and since 2017 the house has offered guided visits through the vineyard and its underground cellar.
Its sparkling brand is Palomas, in Brut Nature (no added sugar) and semi-dry versions, and its reserve wines carry names such as Indomable and Independiente. The house itself describes its whites as fruity and light, its reds as persistent and full-bodied, and its sparkling wines and rosés as dry.
The guided tour lasts about 45 minutes between the vines and the cellar, and runs Wednesday through Sunday at noon and 2 p.m. Tastings are of three labels with a sommelier, and the Wine Lover experience, an hour in the late afternoon, includes wine straight from tank and barrel depending on the season. For groups of 8 to 12 people there is a sensory experience with advance confirmation. The restaurant Terruño 57 has been open since 2021, and the estate also hosts weddings and group events.
The wines
Palomas comes in two versions, Brut Nature, a white blend with no added sugar, and Semi, with a semi-dry profile. The reserve line includes Indomable 57, a red, and Independiente 57, a white.
