The place
Bocanegra advertises itself as the first cheese cellar in Tequisquiapan. It ages cheeses with traditional European recipes and a touch of its own, and calls them signature cheeses. It is on state highway 200, in Fuentezuelas. The cellar visit lasts 40 minutes and leaves every hour, from 10 a.m. to 4 p.m. It tours the underground cellar, explains the aging, and ends with a sensory analysis of a selection of cheeses, which can be accompanied with wine, beer, mezcal, or tequila. Queso, amor y vino (Cheese, Love, and Wine) is a three-hour picnic in the garden, with a board of cheeses, cold cuts, and sparkling rosé wine. For eight people there is a private experience in a cellar 16 ft (5 m) deep, on weekends only. Above the cellar is the restaurant Gastronómica, with its own breads and bacon. The gardens and the hall host weddings and events, and the restaurant is closed on Tuesdays.
