The house
The English engineer Fernando Chapman bought this land west of Parras in 1865, planted a vineyard and fruit trees, built a country house, and put up the winery where winemaking began. The name of the place comes from an Irritila Indigenous man they called Pedrote, and that became Perote.
In the old hacienda compound, the cellars still stand, with their barrels and old milling tools. The grapes are crushed in July and August, and wine and aguardiente (a distilled spirit) come out of it, among them the Barón de Parras, an off-dry red. Since 1992 the hacienda has also been a hotel, with 24 rooms, a restaurant, a pool, and an event hall, so you can sleep next to a 19th-century winery. Winery tours are requested at the front desk.
