The house

A cellar dug 46 ft (14 m) underground holds the wines of Toyan, in a medieval-style building on the highway to Querétaro, in San Miguel de Allende. The tasting room is underground too.

The house dates its origin to 1995 and says it has farmed organically since then. It works Cabernet Sauvignon, Merlot, Cabernet Franc, and Chardonnay, and bottles reds, a rosé, and a white. The press presents Martha Molina as owner and winemaker. Tours go down to the cellar and end in a tasting, at three levels called Plata, Oro, and Diamante (Silver, Gold, and Diamond). On Wednesdays there is breakfast with products from the garden and on Saturdays country cooking with pizzas and grill. Every year the estate celebrates a medieval-themed vendimia.
