The house
Editorial review · reviewed on October 11, 2026Modern winegrowing in Saltillo is recent, and Hacienda San Francisco is one of the houses making it visible. It bottles under its own name and, according to the local press, wants to bring wine to new audiences in the capital of Coahuila. The state government also included it in the Vinos y Dinos route when that was relaunched, in early 2026.
It works two lines. Pájaro Rojo is an uncommon red because it adds the white grape Viognier to Shiraz, in the style of the northern Rhône, and the other line is called 1/4 de Siglo. How it receives visitors is not yet confirmed, so it is best to ask before you go.
