Editorial review · reviewed on October 11, 2026The hacienda was built in 1640 by Captain Alonso de Tovar y Guzmán, and on its land the founding act of Cadereyta de Montes, in Querétaro, was held. Restored, it covers about 128 acres (52 hectares) that hold the vineyard, a lake that serves as a water reserve, the stables, and the gardens. The estate's grapes yield Castro del Marqués, the house white.
More than a tasting visit, Hacienda Tovares is meant as a place to spend the night. It has a boutique hotel with eight rooms and La Hostería, built of stone, with fourteen rooms with bunk beds. The restaurant serves Querétaro cooking with Ñhañhu (Otomi) roots, made with what is grown on the estate, there are tours of the vineyard, and every year a vendimia with an equestrian show is held that appears on the Turismo de Querétaro calendar.
