The house
In a valley on the edge of Aguascalientes, where peaches used to grow, Óscar de la Parra and his wife Yvonne, a botanist, planted vines without a single agrochemical. The vineyard earned organic certification in 2018, and the house says it holds it for both vineyard and wine.
The vines came from France, from a certified virus-free nursery, and are worked without pesticides, fungicides, or chemical fertilizers. The family relies on the biodiversity around the vineyard to protect and feed the vines, and talks about honest wines without additives, in limited production. For the house, giving up chemicals is also a matter of flavor, since it holds that the grape develops better this way.
Malbec is the signature grape. Paradoja and Piensos are its two organic Malbecs, both aged about 14 months in French oak, the second in fourth-use barrels. With Sauvignon Blanc the house bottles Paradoja Blanco, an organic white with no oak. The state press describes it as a boutique winery.
The estate sits on the old road to Calvillo, about 25 minutes from the capital, and is part of the Aguascalientes wine route. A visit, with a tasting and a tour, lets you see up close how an organic vineyard is sustained on the high plateau and taste the Malbec next to the white from the same vineyard.
