The house
A probe measures soil moisture at different depths and a satellite photographs the rows from above. With that data, Bodegas Origen decides how much water its vineyard in Pabellón de Arteaga, north of the city of Aguascalientes, gets, and when the grapes have reached the ripeness it wants.
The house calls its method postmodern winemaking. It moves away from stainless steel as a rule and from aggressive extraction, so that the grape and the place it grew show in the glass. For red it works Malbec, Petite Sirah, and Tempranillo, and for its white, Garnacha Blanca.
Its labels carry Latin names. Primus and Nigrum are reds, Rosatus is the rosé, and Albo is the white, which with the 2023 vintage won a gold medal at the Concours Mondial de Bruxelles in 2024. Tren Rojo completes the line of reds. That gold was one of the awards that put Aguascalientes on the list of Mexican winners in Brussels that year.
It is on the wine route promoted by the municipality and receives visitors. You start among the vines, move on to the winemaking room and the barrel room, and the tasting explains the vine's cycle and how the reds, whites, and rosés are made. Seeing the sensors right in the vine row helps you understand how wine is made in this part of central Mexico.
The wines
Less stainless steel and no aggressive extraction, so the grape comes through. The line has three reds, a Garnacha Blanca white, and a rosé.
