The house

The Capellanía brand has had two lives. In the first, Pedro Saro Martínez, an immigrant from Santander, founded it in 1946 in Ramos Arizpe, and decades later Casa Pedro Domecq absorbed it. In the second, two generations of the Saro family recovered it in 2010 and planted vines at the former Hacienda de San Juan de Amargos.

The house dates the hacienda to around 1750. It sits in the Paredón desert, north of Saltillo, 8 miles (13 km) off the highway from Saltillo to Monclova, and the first harvest went into barrel in 2013. Malbec, Syrah, Muscat, and Cabernet Sauvignon grow in the vineyard.

The main labels carry the names of the animals that roam the vines in the desert. Apis alludes to the bee that feeds on the grape's nectar, Corvus to the crow that steals the seed, and Canis to the coyote that eats the grapes.

Visits must be booked at least five days in advance. The classic tour lasts 45 minutes to an hour, goes through the vineyard and the historic area of the former hacienda, and ends with a tasting of three wines. There is also an experience with three high-end labels and a three-course lunch paired with the house wines. Minors may take the tour with an adult, though not the tasting, and leashed pets may stroll the vineyards and walkways.
