The house
The Loyola family's olive trees took years to bear fruit and, when they finally did, the harvest was lost. The family had bought land in Los Cues, in Huimilpan, to make olive oil, and instead of giving up it planted vines. La Terquedad (Stubbornness) and its wine, Terco (Stubborn), came out of that.
Huimilpan lies south of the city of Querétaro, away from the Tequisquiapan and Ezequiel Montes corridor. The house works three red grapes, Merlot, Tempranillo, and Syrah, bottles them separately under the Terco brand, with a Syrah rosé besides the reds, and has produced vintages since 2014. The family says that with these stubborn wines it wants to push wine culture in the country. Its 2015 Tempranillo won silver at the Concours Mondial de Bruxelles in 2017.
On the same estate is the restaurant Tierra Yerma, which cooks recipes of Spanish origin with French technique and Querétaro ingredients, and serves them with the house wines. There are open-air tastings with pairings, multi-course dinners in the vineyard, and a calendar of events during the year. In September 2026 the estate celebrated its first vendimia festival, with a flamenco night whose dinner was by Tierra Yerma. The house opens Thursday through Sunday, from 1 to 7 p.m.
