The house

Cavall 7 was born from a trip to Bordeaux. Its flagship wine is a blend of five Bordeaux varieties grown in the desert of central Chihuahua, about 11 miles (18 km) south of Ciudad Delicias. With about 210 acres (85 hectares) planted, the winery says it has the largest vineyard in the state and one of the ten largest in the country.

Rancho El Halcón, owned by the Galván family since 1974, is where the first hectare (2.5 acres) of Cabernet Sauvignon was planted in 2012. Jaime Galván Guerrero began almost as a pastime and, according to the winery, expanded the planting when the Bordeaux consultant Stéphane Derenoncourt agreed to join. Winemaking is led by the Chilean winemaker Matías Aguirre Valdivieso.

The vineyard holds Cabernet Sauvignon, Merlot, Malbec, Petit Verdot, Cabernet Franc, Zinfandel, Tempranillo, Syrah, and Ugni Blanc. The winery was equipped with Italian machinery and French oak barrels, with capacity for about 50,000 bottles a year according to the house, and today it bottles five labels: three reds, a white, and a rosé.

The big date is the Vendimia Cavall (the harvest festival), which opens the ranch every year between September and early October with vineyard tours, tastings, grape stomping, and live music. The rest of the year, tours and tastings are booked in advance. In 2025 Cavall 7 won gold at the Concours Mondial de Bruxelles.

The wines

Bordeaux varieties above all. Its flagship red is a blend of five of them, aged in French oak barrels, and the line is rounded out by two more reds, a white, and a Zinfandel rosé.
