The house

Chardonnay and Pinot Noir, the two grapes of Burgundy, make up the whole vineyard at Casa Vegil, on a colonial hacienda in the community of Vegil, in Huimilpan. The vines arrived little by little starting in 2017 and now cover more than 37 acres (15 hectares), according to the house.

Winemaker Fernando Cortés makes FÜGI, a traditional-method sparkling wine with 30 months on the lees, and an aged Chardonnay that spends six months in French oak and another six in bottle. Visits are requested ahead of time and include a vineyard tour by tram or on horseback, a wine tasting, and a stop in the cellar.

The wines

Two grapes and two styles. The aged Chardonnay gets a short maceration, a long fermentation, and six months in French oak, and FÜGI, the sparkling wine, is made by the traditional method with long aging on the lees.
