The house

A vineyard, the Ópalo 21, and an olive grove that yields extra virgin olive oil share the grounds of Rancho Entre Olivos, in San Francisco de los Romo, Aguascalientes. A craft brewery, a Texas-style barbecue restaurant, and a cellar complete the place, which is why it works better as a place to spend the day than as a winery in the usual sense.

Malbec, Tempranillo, Syrah, and Cabernet come together in its blends, and the three labels take the Latin motto of the Aguascalientes coat of arms: Bona Terra, Celum Clarum, and Aqua Clara (good land, clear sky, and clear water). In season it takes part in the state's vendimias.
