The place
Fauna sits inside Bruma, the Guadalupe Valley estate that brings a winery, a hotel and a restaurant together. Chef David Castro Hussong and pastry chef Maribel Aldaco Silva opened it in 2017, with contemporary Mexican cooking and a menu that changes every day. The pantry comes from close by. The restaurant says its quail, rabbit and lamb arrive from farms it trusts, and that neighbors hand-deliver the vegetables each day. The 2026 Michelin Guide Mexico gave it a Bib Gourmand, the guide's distinction for good cooking. It is open from 1 p.m. to 8 p.m., and until 9 p.m. on Friday and Saturday, by reservation. You book separately from the hotel, by email or phone. The restaurant belongs to a complex with a winery, wine garden, shop and lodging, which is how you can pair a meal with a tasting in one visit.
It is part of Bruma, which has its own page in the guide: see the winery Bruma.
