The place
Intro, on the Vía Atlixcáyotl, in Puebla, serves contemporary cooking from breakfast to night, mixing French, Italian, American, Asian, Mexican, and Spanish influences. The wood-fired oven and the smoking mark the menu, with camembert baked in pizza dough, wood-grilled octopus, sourdough pizza, and chateaubriand steak. The wine list has a selection by the glass in sparkling, whites, rosés, reds, and a dessert wine, and bottles from Spain, France, Italy, Germany, Austria, California, Oregon, and Argentina. Among them are several from Baja California, from Guadalupe Valley, and from Coahuila, from Valle de Parras. At the bar they prepare signature and classic cocktails. One Wednesday a month, the last, there is a wine night in which a sommelier presents the labels and the chef pairs them with dishes of the house.
