The house

Nebbiolo rules at Don Tomás. The house crosses it with Cabernet Sauvignon and with Sangiovese to make blended reds aged in French and American oak, and it draws them from a vineyard on the road to San Marcos, in El Porvenir. The project started in 2013 and the label came out in 2017.

Gerónimo Altamirano is the winemaker. The cellar is underground, and you walk through it to see fermentation, barrel aging, and the story of each wine. The guided tasting of four wines happens right there, one of two ways to try the house in Guadalupe Valley (Valle de Guadalupe).

The other is to head out into the vineyard on a cart ride, with a tasting among the vines. The property also has a restaurant, a wood-fired pizzeria, and a wine bar with an open view, and a day pass that includes a pool and vineyard scenery.

To stay the night, there are cabins of wood and stone, some with glass roofs or a hot tub, mini cabins, and a house for groups. Tastings run from 9 a.m. into the afternoon, and it is best to book through the website or write ahead. Monday through Thursday it serves until 4:30 p.m., and Friday through Sunday until 7:30 p.m. The restaurant cooks with local flavors designed to go with the house's wines.
