The house
At Mina Penélope the vineyard and the kitchen fed each other for years: the restaurant that ran on the property made the compost that nourishes the vines. That closed-loop idea sums up the house, which works its vineyard in San Antonio de las Minas with organic and permaculture methods.
Verónica Santiago, winemaker and cofounder, runs the place with her husband, Nathan Malagón. She studied food industry engineering at Tecnológico de Monterrey and earned a master's in enology at the University of Adelaide in Australia. They started in 2014 with the idea of growing their own grapes and making small batches, today about 1,500 cases a year and around ten different wines, according to the press.
Most of the fruit comes from a property the Santiago family planted in 2007, about 5 miles (8 km) from the Pacific, and from an old Grenache vineyard belonging to Malagón's family, with vines around 92 years old. In the cellar they intervene as little as possible so each wine speaks of its place. The palette includes varieties from the Rhône, Bordeaux, and southern Italy, such as Montepulciano and Aglianico.
Until April 2026 the property housed Malva, chef Roberto Alcocer's restaurant, which carried a Michelin Guide recommendation and closed temporarily to look for a new home. The house's tastings continue by reservation and are the way to try, at the source, an orange wine, a Montepulciano rosé, or a sparkling Aglianico.
