The house

Before reaching the cellar, the visit passes the compost. On the Sesma Espinoza family's property, at km 77.5 on the Ensenada to San Vicente highway, the grapes are raised with regenerative agriculture, holistic management, and care for biodiversity. Biofertilizers and pest controls are made on the ranch itself, with no herbicides.

Oceanographer Jesús Sesma founded Dovinto in 2010. He calls his method Ecosistema Óptimo por Inducción Biológica (Optimal Ecosystem by Biological Induction) and carries it into the winery as well: he makes wine without corrections or additives and runs every process on solar power. In 2023 the house announced that its wines were reaching the U.S. market.

The house revolves around Nebbiolo. It works it alone and in blends with Tempranillo, Merlot, and Touriga Nacional, a Portuguese variety, and also bottles a varietal Tempranillo and whites.

Dovinto is on the Antigua Ruta del Vino (the old wine route), south of Ensenada and a good distance from Guadalupe Valley, toward San Vicente. The visit walks the vineyard to show how the compost is made and how everything is reused, continues with a tasting in the winery and the cellar, and can end with a night in its rustic cabins among the vines. The property also hosts weddings and events, and everything is booked through the house's website.

The wines

Reds centered on Nebbiolo, alone or blended with Tempranillo, Merlot, and Touriga Nacional, plus a varietal Tempranillo and whites. The house makes them without corrections or additives, from the grapes of its regenerative vineyard.
