The house

Beneath the Almatierra restaurant in Francisco Zarco lies a cellar where the wine of Ojo Azul Resort rests in French and American oak barrels before bottling. The winery works with grapes from Guadalupe Valley (Valle de Guadalupe) and highlights three wines: a varietal Chenin Blanc, a varietal Cabernet Franc, and a blend of Cabernet Sauvignon with Malbec.

The cellar opens for private tastings, with or without food pairings, led by the resort's sommelier. Upstairs, the restaurant cooks over a wood fire with regional ingredients, and the complex adds a hotel and an event hall, so a tasting can fit inside a weekend stay.
