The house
A xoloitzcuintle, the dog of Mexican history and mythology, gives this house its name. Xolo, which also goes by Casa Itzcuintle, was born in 2017 in Francisco Zarco, on Calle Emiliano Zapata, with the idea of making wines that reflect the character of the region and of working in harmony with the surroundings.
It is not limited to one valley. It buys grapes from Guadalupe Valley (Valle de Guadalupe), Ojos Negros, and San Vicente, and makes reds of Nebbiolo, Cabernet Sauvignon, and Merlot, and whites of Chardonnay and Sauvignon Blanc. The harvest is by hand, between July and September. The wine ferments in stainless steel tanks, spends twelve months in French oak barrels, then rests in large tanks and ages a year in bottle before release.
The winery opens in Francisco Zarco, in the middle of Guadalupe Valley, every day except Tuesday: 10 a.m. to 6 p.m. on Monday, Wednesday, and Thursday, and until 8 p.m. from Friday through Sunday. Guided tastings start every hour from noon on, always by reservation, and the visit explains how the wine is made.
There is also a restaurant that cooks with local ingredients meant to suit its wines, and an online shop that sells by the bottle and in packs, such as one of six bottles of Nebbiolo and another of three, called Orígenes.

What to taste
The Nebbiolo: harvested by hand, twelve months in French oak, and a year in bottle before release, a good showing of the house's long-aging method.
